I cooked the peppers with a Spanish friend who is from Galicia where the padron peppers are from, and he cooked them they way his mother does and that is in a whole lot of oil so I actually did mean 3-4 cups (we were cooking a lot of them all at once).  I&#039;m quite sure you can cook them in less oil in smaller batches and they should be fine.  Shisitos are a nice substitute but lack the nuance of a padron in my opinion.
